Dark Chocolate Spinach Muffins
These are pretty darn tasty ... and a great way to sneak spinach into your kiddo's diet!
Ingredients:
- 2 cups whole wheat flour (or whole grain/oat flour of choice)
- 1 tsp aluminum free baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 egg
- 1/2 cup unsweetened apple sauce
- 2/3 cup honey or pure maple syrup
- 3 tablespoons melted yellow butter
- 1 tsp pure vanilla
- 1/4 cup dark chocolate morsels (or chopped walnuts if you prefer)
- 2 cups fresh spinach processed in food processor (about 1 cup after processing)
Directions:
1. Combine all the ingredients into a bowl and mix with a fork for about 2 minutes
2. Depending upon the flour you use, the batter may be a little thick, if so, slowly stir in 2 tablespoons of water until you get a muffin batter consistency
3. Pour batter into greased muffin pan or muffin stone
4. Bake for 12-15 minutes at 350 degrees
5. Cool and enjoy!
