Spinch and Cheese Cornbread Muffins
This is a strange (but delicious) recipe. Toddler Approved!
Ingredients:
- 1 cup spinach (chopped in a food processor)
- 1 cup ground corn meal
- 1 cup whole wheat flour
- 1/4 cup honey
- 2 teaspoons aluminum free baking powder
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons olive oil
- 1 cup milk
- 1/2 cup grated cheddar cheese
- 1/4 cup feta cheese (optional)
Directions:
1. Wash and chop the greens in a food processor
2. Combine spinach with all ingredients
3. Mix softly into a batter
4. Fill greased muffin tin or muffin stone about halfway with batter
5. Bake for 20 minutes at 375 degrees (makes 12 muffins)
