Clean and Simple Fried Rice
This was the first meal I learned to make in my 7th grade home economics class (Hey, Mrs. Hewlitt). I made a few minor changes to make it faster to cook, and it's always a big hit around our house.
Easy Fried Rice
Ingredients:
- 5-8 long carrots (cubed)
- 1-2 cups frozen peas
- 1 small onion (diced)
- 3 cups cooked brown rice
- 1-2 tablespoons peanut oil (not olive oil because of the high heat cooking)
- 1/2 cup teriyaki sauce (make your own here)
- 3-4 eggs
- salt and pepper
Directions:
1. Prepare your vegetables
2. Heat oil in a large skillet pan (large enough to hold the cooked rice)
3. Cook the rice according to the package
4. Heat your vegetables over med/high heat until cooked (constantly stirring)
5. Sprinkle with salt and pepper
6. Stir in your cooked rice and 1/4 cup of teriyaki sauce
7. Move your rice to one side to scramble the eggs
8. Stir everything together (including the other 1/4 cup of teriyaki sauce)
9. Serve and enjoy!
