Iced Raspberry Grapefruit Muffins
These muffins are so moist and delicious - they almost taste like a doughnut!

Ingredients:
- 2 cups of flour
- 1 cup sugar
- 1 tsp baking powder (aluminum free)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 pint raspberries (seedless if you can find them)
- 1 egg
- 1/4 cup melted butter
- 3/4 fresh squeezed grapefruit juice
- 1 tbsp grated grapefruit peel
Grapefruit Icing Ingredients:
- 1 1/2 cup powdered sugar
- 1/4 cup grapefruit juice
- 1/2 tsp raspberry juice
- 1 tbsp salted butter
- 2 tbsp grapefruit zest
Directions:
- Preheat oven to 400 degrees
- Combine dry ingredients in a large bowl (flour, baking powder, baking soda, salt)
- Stir in raspberries (if they are ripe they will mush in nicely)
- When you wash your raspberries, there will be some raspberry water (set it aside)
- In another large bowl beat eggs, sugar, butter, grapefruit juice, and grated peel for about 2 minutes
- Combine both bowls and stir softly together (you mixture will be a bit runny like this)
- Spoon batter into greased muffin tin
- Bake at 400 degrees for about 15 minutes
Icing Directions:
- Zest 2 tablespoons of grapefruit peel and combine it with raspberry water
- Melt butter in microwave
- Mix together butter, grapefruit juice, zest, and powdered sugar to make your icing
- Drizzle over muffins while they are still warm
